Since my sister graduated and moved back from college, my mom has gone from making dinner for three people to making dinner for four (often five if my boyfriend comes over for the day) and despite contrary belief, it's not an easy task!

Slow Cooker Chunky Minestrone

Asian Salmon Bowl with Spinach





(Prep time: 20 minutes Cook time: 20 minutes)












Ingredients: 

1  cup jasmine rice
1  tablespoon butter
1  garlic clove(s), minced
1/4  teaspoon crushed red pepper flakes
3  tablespoons maple syrup
2  tablespoons lime juice
3  tablespoons soy sauce (low sodium)
1  teaspoon water
1  teaspoon cornstarch
4  salmon fillet(s) (6 ounces each), skin removed
1  teaspoon vegetable oil
6  cups fresh spinach
2  teaspoons black sesame seeds


Heat oven to 425 degrees.

[1] Cook rice according to package instructions.

[2] In a small saucepan, melt butter over medium heat. Add the garlic and pepper flakes and saute until garlic is lightly golden, 1 minute. Add syrup, lime juice and soy sauce; cook until bubbling, 3 minutes.

[3] In a bowl, combine cornstarch and water; stir into garlic glaze. Cook until slightly thick, 1 minute. Arrange fillets on a foil-lined baking sheet. Spread a little glaze over each fillet. Roast until just cooked through, 12 minutes. In a medium skillet, warm oil over medium heat. Add spinach; saute until just wilted. Remove from pan; set aside.

[4] Divide rice among individual bowls; top each with spinach and a salmon fillet, broken into large pieces. Drizzle with remaining sauce; sprinkle each with black sesame seeds.

I love cooking and everything about it BUT my father in law has lung cancer so we are know juggling more things on our schedule. I home school so in a few weeks things are going to be crazy. Having a meal planner will help so much.

I tend to make the same four meals (Chicken Lo Mein, Steak and Potatos, Bacon Wrapped Shrimp, and Cherry Sherry Ham) on a rotation. This would, hopefully, break the cycle :)

My guy and I work really different schedules, and neither of us eats right. It'd be nice to have a plan and know that there's something good to eat, ready to go in the kitchen.
